Lentil Soup!

Tonight is soup or stew night, according to my new 4-night meal plan. The rotation is Japanese-Pasta/Italian-Meat & Potatoes-Soup or Stew. The ingredients are simple and easy: onion, celery, carrots (chopped up in the bag*), lentils, barley or brown rice, olive oil and bay leaves. Optional add-ins are garlic, boullion, and sausage (veggie sausage for me). Saute the veggies, add 6-8 cups of water and your seasonings, add the lentils and grain, and bring to a boil. Simmer for a long time (about an hour). Add sausage near serving time.

* You should be wondering why these vegetables are in this freezer bag. This is my pre-prepared soup starter. I buy a relatively large amount of onions, celery and carrots at once, then employ my food processor to chop them all up. It saves time.
