Banana-Molasses Muffins
(from the Vegetarian Mother's Cookbook by Cathe Olsen)

1 cup rolled oats
1/4 cup almonds (I used slivered almonds)
1 cup whole wheat flour
1/2 t. baking soda
1/2 t. baking powder
1/2 t. cinnamon
2-3 bananas, mashed
1/4 cup raisins
1 egg
1/3 cup oil
3 T. blackstrap molasses
1/4 cup plain yogurt

The recipe calls for grinding the almonds and oats in a food processor, but I missed that step. Anyhow, mix the dry ingredients in one bowl. Mash the bananas in another bowl. Whisk together the wet ingredients in a glass measure. Mix them all together, then place evenly in 12 muffin cups. Bake for 20 minutes at 375 degrees.
